Our cheese

Semi-ripened cheeses have a buttery texture so they can be cut in fine or very fine slices. The more ripened cheeses have a more reliable texture and slices must be cut thicker. For a good cut let the cheese stand at 22-24°, as the cut is cleaner, and the knife offers less resistance, thus there is less risk of it crumbling.
