Our cheese

Tender and semi-ripe pasteurized cheeses have a more elastic texture. An acid flavour predominates with lactic notes reminiscent of butter. The aged cheese crumbles into flakes. As ripening advances, acidity disappears to develop more complex aromas and flavours, particularly in those made from raw milk.
